To celebrate the 2023 Museumnacht in Amsterdam, bis bis designed a 5-course dinner inspired by still life paintings from old and modern art masters. Our chef duo guided our guests through unexpected vegetarian reinterpretations of the elements in each canvas, questioning the perspective of what a “still life” is nowadays. A true transtemporal journey across art, flavors and unexpected transformations!

FIRST COURSE
Pumpkin,Yayoi Kusama, 1998
"Pump(kin)". Pumpkin puree, roasted butternut squash bites in miso butter coated with leek ash, balsamico dots, beluga lentils and popcorn powder
SECOND COURSE
A still life with a platter of crabs and shrimp, a glass jug of flowers, a Roemer and a long-stemmed tazza of wine, an earthenware jug, a loaf of bread, a bunch of grapes and a half-peeled lemon, Alexander Adriaenssen, 1946
“A platter of ‘crabioli’, a splash of long-simmered broth, a bouquet of herbs and a half peeled lemon ”. Homemade pasta with sweet potato “lobster” sauce filling, white wine vegetable broth and garnish of herbs and citrus zest

"Seeds and Thoughts in Cabbage Heads". Mini tartelettes with hazelnut cream, roasted brussel sprouts, pickled spring onions, broccoli sprouts, horseradish cream, charred cabbage and vegetable ‘leftover’ bits

"Open up, melt down" . Bay leaf ice cream, quince coulis, orange crumble, caramelized quince and beetroot powder
